Here’s a cute little idea for Valentine’s Day: mini cakes and cake bites. Plus, you’d never know that it’s packet mix cake!
I had a tiny little heart shaped tray I’ve been wanting to try out for ages and thought Valentine’s Day would be the perfect excuse. After following the directions on the box to make the chocolate cake batter, I filled up the tiny hearts about halfway. To be honest, they’re such shallow trays that I have no idea what they’re actually for but as long as you don’t overfill them they seem to work out with cake!
Because you’re not baking a typical cake, you want to disregard the cooking time on the box and just be very vigilant and watch them. I found that when they started to come away from the walls of the tray they were perfect (better to have them overcooked than under so they don’t fall apart in the decorating).
I realised I had a lot of batter left over so I put it to work in some tiny cake tins. After letting them completely cool it’s time to move onto the icing. I used half the icing mixture it came with to fill the layers of my triple layer mini cake.
Now for the final touches. I whipped up a batch of this shiny chocolate glaze but used maple syrup instead of corn syrup. I dipped each little heart into the glaze and then wiggled them into a big bowl of sprinkles. For the mini cakes I spooned spoonfuls of the glaze onto the top and nudged it over the edges in a few spots then topped it with lots of sprinkles.
The mini cakes would make such a cute gift for someone this Valentine’s Day (or, you know, yourself). And the cake bites would be great at a party!
